In a narrow storefront with no sign in Roma, Mexico City, Expendio de Maíz Sin Nombre has become one of the most discussed places to eat in the capital. There are no white tablecloths. The cooking turns entirely on maize.
Why corn is so special in Mexico
In Mexico, maize is the root of the culture itself. Domesticated here thousands of years ago, corn runs through the country's history, myths, and daily life, to the point that an old saying holds that Mexicans are "people of corn." Native heirloom varieties come in a wealth of colours and flavours that industrial farming has erased almost everywhere else, so a kitchen devoted entirely to that corn is protecting something sacred.
No menu, cash only, arrive early
Everything starts with heirloom corn the team nixtamalises and grinds in-house into thick, handmade tortillas. You sit down with no menu, say what you don't eat, and dishes keep coming until you're full, a kind of Mexican omakase. Because it's all maize rather than wheat, the food is gluten-free, and vegetarians and vegans are looked after easily. A few practical notes: no prices are displayed and it's cash only, there are no reservations, and the space is tiny, so arrive early.

At Jade Peak, what won us over is the idea behind it, a kitchen rooted in its people and its land. It carries a Michelin Bib Gourmand, yet its real mission is rescuing native corn, backing family farmers, and keeping rural traditions alive. It has even joined "Pide lo que quieras, paga lo que puedas" (pay what you can), a day when you eat and pay whatever you're able to, so good food isn't reserved only for those who can afford top prices.
